Tomato Soup with Pork Meatballs

Ingredients:

  • 250g minced pork
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp corn starch
  • 1/2 tsp salt & pepper
  • A few slices ginger
  • 1 stalk spring onion (separate into green and white, chopped)
  • 3–4 tomatoes (cut into wedges)
  • 2 cloves garlic (minced)
  • 700ml water or stock
  • 1 tsp sugar
  • A dash of soy sauce

Steps:

  1. Crush ginger and spring onion slightly. Soak them in a small bowl of warm water for 5–10 minutes.
  2. In a bowl, mix minced pork, oyster sauce, corn starch, salt, and pepper.
    Add the ginger-spring onion water bit by bit, mixing in one direction until the meat becomes sticky and bouncy. Form into small balls.
  3. In a pot, heat a little oil. Sauté garlic and white part of spring onion until fragrant. Add tomatoes and cook until soft and saucy.
  4. Pour in water or stock. Bring to a boil, then simmer 5 minutes.
  5. Drop in the pork balls gently. Simmer until they float and are cooked through (8–10 minutes).
  6. Add sugar and soy sauce (or salt) to balance.
  7. Garnish with chopped spring onions. Serve hot with rice or noodles.
