Tomato, egg & beef stir fry

A quick and comforting stir-fry with tender beef, soft scrambled eggs, and juicy tomatoes.

Serving size: 2 adults + 2 kids
Ingredients
* 250g sliced beef (marinate with 1 tbsp soy sauce, 1 tsp sesame oil, 1 tsp cornstarch)
* 4 eggs, beaten with splash of milk
* Splash of milk
* 5 medium tomatoes
* 2 cloves garlic, minced
* White part of spring onion
* Spring onion, chopped

Marinade for beef:
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp corn starch
- Cooking oil

Sauce:
- 1 tbsp of ketchup
- 1 tbsp of soy sauce
- Salt and sugar to taste

Steps:
1. Marinate sliced beef for at least 10 mins
2. Blanch tomatoes in hot water and peel off the skin (Optional)
3. Scramble eggs lightly, set aside
4. Sauté white part of spring onion, garlic and beef
5. Add tomatoes and cook till soft
6. Add seasoning let it simmer a bit
7. Toss in eggs, stir gently.
8. Garnish with spring onion.
