Steamed Morel Mushrooms Meat Soup
Ingredients
- 300g minced pork
- 200g Chinese yam, peeled and chopped
- 3 eggs
- 6 dried morel mushrooms, soaked
- A few strips of ginger
- Mushroom soaking water
- 1–2 tsp corn flour
- Salt, to taste
- Goji berries, rinsed
Instructions
- Chop into small pieces, then gently mash until slightly slimey.
- In a bowl, combine minced pork, Chinese yam, salt, and corn flour until smooth.
- Divide the mixture evenly into 3 heatproof bowls. Make a small hole in the center of each.
- Crack an egg into each hole. Top with soaked morels and ginger strips.
- Steam for 15 minutes. Pour in mushroom soaking water into each bowl, then steam another 15 minutes.
- Sprinkle rinsed goji berries on top. Adjust seasoning with salt (or soy sauce if desired).
