Steamed Morel Mushrooms Meat Soup

Ingredients

  • 300g minced pork
  • 200g Chinese yam, peeled and chopped
  • 3 eggs
  • 6 dried morel mushrooms, soaked
  • A few strips of ginger
  • Mushroom soaking water
  • 1–2 tsp corn flour
  • Salt, to taste
  • Goji berries, rinsed

Instructions

  1. Chop into small pieces, then gently mash until slightly slimey.
  2. In a bowl, combine minced pork, Chinese yam, salt, and corn flour until smooth.
  3. Divide the mixture evenly into 3 heatproof bowls. Make a small hole in the center of each.
  4. Crack an egg into each hole. Top with soaked morels and ginger strips.
  5. Steam for 15 minutes. Pour in mushroom soaking water into each bowl, then steam another 15 minutes.
  6. Sprinkle rinsed goji berries on top. Adjust seasoning with salt (or soy sauce if desired).
