Steamed Minced Meat with Salted Fish (咸鱼蒸肉饼)

This is my childhood favourite. Just a simple plate of steamed minced pork with salted fish, but when you spoon that savory meat juice over hot rice, it’s comfort at its best.
What You’ll Need (serves 2-3):
- 250g minced pork (with a bit of fat)
- 20g salted fish, finely chopped
- 2 tbsp water
- 1 tsp light soy sauce
- 1 tsp oyster sauce
- ½ tsp sesame oil
- ½ tsp cornstarch
- A pinch of white pepper
- Ginger strips
How to Make It:
- Heat a little oil in a small pan and fry the chopped salted fish until fragrant and slightly crispy. Set aside.
- In a bowl, mix the minced pork with soy sauce, oyster sauce, sesame oil, cornstarch, and pepper. Slowly stir in the water until the mixture feels sticky and smooth.
- Mix in the salted fish.
- Lay ginger strips over the mixture.
- Spread the mixture evenly on a heatproof plate.
- Steam over boiling water for 15 minutes until the meat is fully cooked.
- Sprinkle with spring onions and serve immediately with rice.
