Steamed Minced Meat with Salted Fish (咸鱼蒸肉饼)

This is my childhood favourite. Just a simple plate of steamed minced pork with salted fish, but when you spoon that savory meat juice over hot rice, it’s comfort at its best.

What You’ll Need (serves 2-3):

  • 250g minced pork (with a bit of fat)
  • 20g salted fish, finely chopped
  • 2 tbsp water
  • 1 tsp light soy sauce
  • 1 tsp oyster sauce
  • ½ tsp sesame oil
  • ½ tsp cornstarch
  • A pinch of white pepper
  • Ginger strips

How to Make It:

  1. Heat a little oil in a small pan and fry the chopped salted fish until fragrant and slightly crispy. Set aside.
  2. In a bowl, mix the minced pork with soy sauce, oyster sauce, sesame oil, cornstarch, and pepper. Slowly stir in the water until the mixture feels sticky and smooth.
  3. Mix in the salted fish.
  4. Lay ginger strips over the mixture.
  5. Spread the mixture evenly on a heatproof plate.
  6. Steam over boiling water for 15 minutes until the meat is fully cooked.
  7. Sprinkle with spring onions and serve immediately with rice.
