Simple Recipes for Busy School Weeks
1️⃣ Pancake Cubes (Freeze & Cook Anytime)

Ingredients:
- 1 cup plain flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1 egg
- ¾ cup milk
- 1 tbsp melted butter or oil
- Pinch of salt
Steps:
- Mix all dry ingredients in a bowl.
- Add egg, milk and melted butter. Whisk until smooth.
- Pour batter into silicone cube trays.
- Freeze until solid.
To Cook:
Place frozen cubes directly onto a lightly greased pan over low-medium heat.
Cover with a lid and cook until bubbles form. Flip and cook until golden.
2️⃣ Batch-Cooked Veggie & Mince Cubes

Ingredients:
- 200g minced beef (can use minced chicken or pork)
- ½ onion, diced
- 1 small carrot, finely chopped
- ½ cup pumpkin, diced small
- 1–2 cloves garlic, minced
- 1–2 tsp light soy sauce (adjust to taste)
- 1 tsp 100% oyster sauce
- ½–1 cup water or broth
- ½ cup broccoli, finely chopped (added last)
Steps:
- Heat a little oil in a pan. Sauté minced garlic and onion until fragrant.
- Add minced meat and cook until browned.
- Stir in carrot and pumpkin. Cook for a few minutes.
- Add soy sauce and oyster sauce. Stir to combine.
- Pour in water or broth and simmer until vegetables are tender.
- Add chopped broccoli last and cook for 1–2 minutes, just until bright green and tender.
- Let cool.
- Spoon into silicone cube trays and freeze.
- Freeze rice in silicone containers.
To Use:
Pop frozen cubes and rice into steamer bowl and microwave for 2-3 minutes.
3️⃣ 5-Minute Cheesy Sweet Potato Bowl

Ingredients:
- Stringer cheese sticks
- Splash of milk
- Honey (optional)
- Crackers
Steps:
- Break the stringer cheese sticks into smaller pieces and place in a microwave-safe bowl with milk.
- Microwave for 20–40 seconds, until melted (watch closely so it doesn’t overheat).
- Drizzle honey.
- Serve warm with crackers for dipping.
