Simple Chicken Soup + Saucy Shredded Chicken

My lazy 2 dishes from 1 pot 😌
Chicken soup + saucy shredded chicken. Simple, fast, and super yummy.

Recipe:
Chicken Soup:

– 1 whole chicken (or half)
– 6 red dates
– goji berries
– 1–1.2L water
– 1 tsp salt (adjust to taste)

Boil everything in the soup cooker till the chicken is tender.
Cooking on stove: Bring it to a boil, then lower the heat.
Simmer for about 1 hour until the chicken is tender.

Sauce:
– 3 cloves garlic, minced
– 1 tbsp minced ginger (reduce if your kids can’t take the heat)
– 2 tbsp chopped spring onion
– 1 tbsp hot oil
– 2 tbsp soy sauce
– 1 tbsp oyster sauce
– 1/2 tsp sugar
– Pinch of salt
– 2-3 tbsp chicken soup

Mix garlic, ginger, and spring onion in a bowl. Pour the hot oil over. Add the sauces, sugar, and salt.

Shred the cooked chicken, pour the sauce over, toss, done.
