Simple Chicken Soup + Saucy Shredded Chicken
My lazy 2 dishes from 1 pot π
Chicken soup + saucy shredded chicken. Simple, fast, and super yummy.
Recipe:
Chicken Soup:
β 1 whole chicken (or half)
β 6 red dates
β goji berries
β 1β1.2L water
β 1 tsp salt (adjust to taste)
Boil everything in the soup cooker till the chicken is tender.
Cooking on stove: Bring it to a boil, then lower the heat.
Simmer for about 1 hour until the chicken is tender.
Sauce:
β 3 cloves garlic, minced
β 1 tbsp minced ginger (reduce if your kids canβt take the heat)
β 2 tbsp chopped spring onion
β 1 tbsp hot oil
β 2 tbsp soy sauce
β 1 tbsp oyster sauce
β 1/2 tsp sugar
β Pinch of salt
β 2-3 tbsp chicken soup
Mix garlic, ginger, and spring onion in a bowl. Pour the hot oil over. Add the sauces, sugar, and salt.
Shred the cooked chicken, pour the sauce over, toss, done.
