Rice Cooker Cordyceps Flower Chicken Rice with Mushrooms

When I need something quick but still comforting and nutritious, one pot rice cooker meals are usually my go-to.

Ingredients (For 3-4 pax)

  • 1 cup rice
  • 500g chicken
  • 1 small handful cordyceps flowers
  • 8-10 small dried shiitake mushrooms, soaked and sliced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp corn starch
  • Salt and white pepper to taste
  • Soaked mushroom water

Optional toppings: chili oil, fried shallots, spring onion

Steps

  1. Soak dried shiitake mushrooms in warm water for at least 1 hour, or until softened. You can use the soaking water as part of the rice cooking liquid for extra flavour.
  2. Marinate chicken with soy sauce, oyster sauce, corn starch, salt and white pepper for at least 1 hour.
  3. Wash rice and add into rice cooker with mushroom water.
  4. Add mushrooms, cordyceps flowers and chicken on top.
  5. Cook using normal rice mode.
  6. Once done, mix everything together. Top with chili oil and fried shallots if you like.
