Morel Mushroom & Chinese Yam Soup
Ingredients
- 6–8 morel mushrooms
- 500g soup bones (pork or chicken)
- 1 big apple or 2 small medium apples, cut into chunks
- 6–8 red dates
- 4-6 dried figs
- 200–300g Chinese yam
- Water
Steps
- Rinse morel mushrooms well. Soak for 15 mins and keep the soaking water.
- Blanch soup bones, then rinse clean.
- Wash apples, red dates, and figs.
- Add everything into a pot, including the morel soaking water.
- Top up with water to cover ingredients.
- Bring to a boil, then simmer for 1 - 2 hours.
