Morel Mushroom & Chinese Yam Soup

Ingredients

  • 6–8 morel mushrooms
  • 500g soup bones (pork or chicken)
  • 1 big apple or 2 small medium apples, cut into chunks
  • 6–8 red dates
  • 4-6 dried figs
  • 200–300g Chinese yam
  • Water

Steps

  1. Rinse morel mushrooms well. Soak for 15 mins and keep the soaking water.
  2. Blanch soup bones, then rinse clean.
  3. Wash apples, red dates, and figs.
  4. Add everything into a pot, including the morel soaking water.
  5. Top up with water to cover ingredients.
  6. Bring to a boil, then simmer for 1 - 2 hours.
