French Bean Egg Omelette

Ingredients:

  • 150–200g French beans (chopped finely)
  • 4 eggs
  • 1 clove garlic (minced)
  • 1–2 tbsp oil
  • Dash of soy sauce
  • Salt to taste

Steps:

  1. Chop French beans into small pieces.
  2. Heat oil in pan, add French beans first and stir-fry for 2–3 mins until slightly tender.
  3. Add garlic, and fry until fragrant. Mix together.
  4. Add a dash of soy sauce. Stir to coat evenly.
  5. Spread the beans evenly across the pan in a single layer.
  6. Beat eggs and pour over the beans to coat them evenly.
  7. Let the bottom set and turn golden, then flip or fold to cook the other side until firm.
