Chinese Yam & Corn Soup

A light, naturally sweet, and nourishing recipe that’s perfect for both adults and kids. Chinese yam is especially gentle on the stomach, great for digestion, and provides energy, making it a wonderful ingredient for young children.
Ingredients:
- 200g Chinese yam, peeled and cut into chunks
- 1 corn, cut into chunks
- 5 red dates, seeds removed and halved
- A small handful of goji berries
- 300g soup bones
- 1.2 liters water
Steps:
- Blanch the soup bones in boiling water for 3–5 minutes, then rinse.
- Peel and cut the Chinese yam and corn. (Fresh Chinese yam may make your skin itchy because of its sap. Wear gloves or rinse your hands with vinegar/lemon water after handling.)
- In a pot, add water, soup bones, Chinese yam, corn, and red dates. Bring to a boil.
- Reduce heat and simmer for 1–1.5 hours for a richer flavor.
- Add goji berries 5 minutes before finishing.
- Serve warm and enjoy!
