Beef Udon + Freezer Prep

Ingredients:
Beef Sauce:

  • 250g sliced beef (shabu shabu or sukiyaki cut)
  • 1 yellow onion
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • 2 tsp sugar

Beef udon soup:

  • Frozen udon
  • 200ml water/dashi broth
  • If using plain water, add dashi powder
  • Salt to taste
  • Optional garnish: dried kelp, spring onion, tenkasu (tempura bits)

Steps:

  1. Stir fry beef first
    Heat a pan with a little oil.
    Add onion and cook until slightly soft.
    Add beef, soy sauce, mirin and sugar.
    Stir fry until just cooked through.
  2. Portion & freeze
    Let it cool.
    Divide into small portions (kid-size friendly).
    Freeze until ready to use.
  3. When ready to eat
    Bring 200ml water to a boil.
    Add dashi powder.
    Add one portion of frozen beef (no need to defrost) + udon.
    Let it simmer a few minutes till cooked through.
    Add dried wakame seaweed.
    For busy days, you can even pop everything into microwave and heat up.
  4. Serve
    Top with spring onion or tenkasu if you like.
